Protein is an important part in the plasma cells. Protein is also available as a food reserve.
Proteins can undergo hydrolysis and broken into pieces smaller as proteosa, peptone, polypeptides, and ultimately amino acids.
Bond between one amino acid with another amino acid called peptide bonds. This bond is realized if the carboxyl group of one amino acid with the amino group of amino acids (C - N).
Dismantling proteins into amino acids requires the help of enzymes protease and water to hold the peptide bond hydrolysis. This hydrolysis can occur if the heat the protein, given the acid or base.
Based on the dissolution properties of proteins can be divided into:
a. Albumin that are soluble in water and dilute solution of neutral salt
b. Globulins that are insoluble in water, but soluble in neutral salt solutions such as NaCl
c. Glutelin that are soluble in alcohol or in dilute alkali and acid
d. Prolamin that are soluble in alcohol or in dilute alkali and acid.
